Add cabbage, scallions and 1 teaspoon garlic; cook, stirring occasionally, until the cabbage begins to wilt, about 3 minutes. Stir in beans, corn, 1 minced chipotle, adobo sauce, 1 tablespoon lime juice, 1/2 teaspoon lime zest and ¼ teaspoon salt. Cook, stirring frequently, just until warmed through, about 2 minutes. Remove from heat; stir in cilantro. On a work surface, lay out egg roll wrappers with 1 corner pointing away from you. Mound 1/3 cup filling in the center of each wrapper. Brush egg around the edges. Fold the corner closest to you over the filling; bring the side corners to the middle. Continue rolling away from you to form a tight seal around the filling. Arrange the egg rolls in an even layer in the basket of an air fryer; coat all sides with cooking spray. Cook at 350°F, flipping once, until golden and crisp, 10 to 15 minutes. Meanwhile, combine yogurt and the remaining 1 minced chipotle, 1 tablespoon lime juice, 1 teaspoon lime zest, 1/2 teaspoon garlic and 1/4 teaspoon salt in a small bowl. Serve the egg rolls with the sauce. To make ahead Refrigerate sauce (Step 4) in an airtight container for up to 3 days. Percent Daily Value (%DV) found on nutrition labels tells you how much a serving of a particular food or recipe contributes to each of those total recommended amounts. Per the Food and Drug Administration (FDA), the daily value is based on a standard 2,000 calorie diet. Depending on your calorie needs or if you have a health condition, you may need more or less of particular nutrients. (For example, it’s recommended that people following a heart-healthy diet eat less sodium on a daily basis compared to those following a standard diet.)
