  • Place cucumbers on a cutting board and cover with a paper towel or clean kitchen towel. Smash with a meat mallet or heavy pot until they start to break apart. Transfer to a colander and sprinkle with salt. Let stand for 10 minutes.

  • Meanwhile, whisk vinegar, tamari, sesame oil, chili oil, garlic and sugar in a large bowl.

  • Turn the cucumbers out onto a clean kitchen towel and gently pat dry. Add the cucumbers to the dressing and toss to coat. Sprinkle with cilantro and sesame seeds.
