  • Preheat oven to 375°F. Position rack in lower third of oven.

  • To prepare crust: On a lightly floured surface, roll pastry dough into a 13-inch circle, about 1/8-inch thick. Carefully transfer to a 9-inch pie pan, pressing into the bottom and up the sides; roll excess dough under the edges and crimp as desired. Refrigerate, uncovered, until ready to use.

  • To prepare filling: Whisk together granulated sugar, 1/4 cup flour, cinnamon and salt in a large bowl. Add pear slices and lemon juice; toss to coat. Place in the prepared chilled crust.

  • To prepare streusel: Combine oats, flour, walnuts and brown sugar in a medium bowl. Stir in melted butter just until combined. Sprinkle over the pear filling. Bake until the crust and streusel are golden brown, 55 to 60 minutes. Place on a wire rack and cool completely, about 1 hour, 30 minutes. Drizzle with caramel sauce, if desired.
