Whisk egg, milk, oil and vanilla in a medium bowl. Add the wet ingredients to the dry ingredients and whisk until just combined. Let stand for 10 minutes. Preheat a waffle iron to medium-high. Meanwhile, beat cream and maple syrup with an electric mixer in a large bowl until soft peaks form, about 3 minutes. Coat waffle iron with cooking spray. Add 1/2 cup batter and cook according to manufacturer's directions. Repeat with the remaining batter. Serve the waffles topped with the whipped cream and strawberries. Garnish with confectioners' sugar, if desired.
