  • Pulse serrano (or jalapeño), shallot and garlic in a mini food processor, scraping down the sides as necessary, until a paste forms. Heat 1 tablespoon oil in a medium skillet over medium-high heat. Add the paste and cook, stirring, until aromatic, about 1 minute. Add rice, kecap manis, soy sauce, salt and pepper; stir-fry until the rice is evenly coated and heated through, about 2 minutes.

  • Meanwhile, heat the remaining 1 tablespoon oil in a small nonstick skillet over medium heat. Crack in eggs and cook until the whites are set but the yolks are still runny, 3 to 4 minutes.

  • Top the rice mixture with the eggs. Garnish with tomatoes and cucumbers, if desired.
