I made this and it was tasty, healthy, and adaptable. I had about 2 cups of leeks, but extra spinach on hand, so I just threw that in. I liked that this is a LOT of vegetables to a relatively small amount of reasonably-healthy cheese and eggs. I cut it into 6 portions and took one in my lunch each day this week. Enjoyed it every time!
