Add shallot and cook, stirring occasionally, until soft, about 1 minute. Add spinach in batches, cooking and stirring occasionally until completely wilted, 2 to 4 minutes. Continue cooking, pressing the spinach against the sides to release as much water as possible, until most of the water evaporates, 2 to 3 minutes more. Remove from heat and stir in cream cheese, Parmesan and pepper. Return the pot to low heat and cook, stirring frequently, until well combined and the cheese melts, about 1 minute.
