  • Place beets in a microwave-safe dish. Add enough water to cover the bottom of the dish. Cover the dish with microwave-safe plastic wrap. Microwave on High until fork-tender, 12 to 15 minutes, turning the beets once halfway through to prevent mushiness. Transfer the beets to a cutting board. When cool enough to handle, trim off and discard stems and skin. Slice the beets into 1/4-inch-thick rounds, about 16 slices.

  • Meanwhile, to aid slicing, place goat cheese in freezer until it's slightly firm, about 10 minutes. Cut the goat cheese into 1/4-inch-thick slices, about 14 pieces.

  • Shingle 2 slices of beet followed by 2 slices goat cheese placed side by side on a serving platter. Repeat the pattern to create a candy cane shape. Sprinkle with salt and pepper. Top with chopped pecans and drizzle with honey.

To make ahead:

Prepare beets (Step 1) and goat cheese (Step 2) and refrigerate separately for up to 1 day. Proceed with Step 3 when ready to serve.
