Arrange sweet potatoes in an even layer in a 9-by-13-inch baking dish. Drizzle with oil and sprinkle with salt and pepper. Stir to coat. Cover and bake for 15 minutes. Uncover and bake, stirring occasionally, until tender, 35 to 40 minutes. When the sweet potatoes are tender, stir in 1 cup cheese and half the scallions. Sprinkle with the remaining 1/4 cup cheese. Bake until hot and the cheese is melted, about 5 minutes. Sprinkle with bacon. Dollop sour cream evenly over the top and sprinkle with the remaining scallions.
