  • Cut watermelon in half. Using a large spoon, scoop out and reserve the pink flesh (you will have about 8 cups). Discard rind.

  • Process the watermelon and lime juice in a blender (in batches if necessary) until smooth and frothy, about 30 seconds.

  • Pour the mixture through a fine-mesh strainer into a pitcher, pressing with a spoon to release the juices. Discard solids.

  • To prepare optional salted rims: Spread salt on a small plate. Run a lime wedge around the rims of 2 glasses; dip the rims into the salt, rolling them around to coat.

  • Combine 1 cup watermelon juice (reserve the remaining juice for anther use), tequila and orange juice in a cocktail shaker. Add ice; cover and shake vigorously to mix. Fill 2 glasses (or the prepared glasses) with ice. Strain the cocktail into the glasses. Garnish with lime wedges, if desired.

To make ahead

Cover and refrigerate juice (Steps 1-3) for up to 4 days. Stir before serving.
