Ingredients

  • 1 ½ teaspoons minced garlic

  • ¼ teaspoon salt

  • 3 tablespoons extra-virgin olive oil, divided

  • 1 teaspoon grated lemon zest

  • 5 teaspoons lemon juice, divided

  • 1 teaspoon paprika

  • ½ teaspoon dried oregano

  • ½ teaspoon cayenne pepper

  • ½ teaspoon ground pepper, divided

  • 1 ¼ pounds medium peeled, deveined raw shrimp, tail on

  • ¼ cup plain whole-milk Greek yogurt

  • ¼ cup crumbled feta cheese

  • 1 tablespoon water

Directions

  1. Preheat a gas or charcoal grill to high (450°F to 500°F). Place minced garlic on a cutting board; sprinkle with salt. Using the flat side of a knife, mash the salt into the garlic to make a paste. Transfer the garlic paste to a large bowl; stir in 2 tablespoons oil, lemon zest, 3 teaspoons lemon juice, paprika, oregano, cayenne and 1/4 teaspoon pepper. Fold in shrimp until fully coated. Let stand for 5 minutes.

  2. Meanwhile, combine yogurt, feta, water and the remaining 1 tablespoon oil, 2 teaspoons lemon juice and 1/4 teaspoon pepper in a medium bowl.

  3. Thread the shrimp evenly onto 8 (6-inch) skewers. Oil the grill rack by holding an oil-soaked paper towel with tongs (do not use cooking spray on a hot grill). Place the skewers on the oiled rack; grill, uncovered, until opaque and lightly charred, 2 to 3 minutes per side. Serve with the dipping sauce.

* Daily Values (DVs) are the recommended amounts of nutrients to consume each day. Percent Daily Value (%DV) found on nutrition labels tells you how much a serving of a particular food or recipe contributes to each of those total recommended amounts. Per the Food and Drug Administration (FDA), the daily value is based on a standard 2,000 calorie diet. Depending on your calorie needs or if you have a health condition, you may need more or less of particular nutrients. (For example, it’s recommended that people following a heart-healthy diet eat less sodium on a daily basis compared to those following a standard diet.)
