  • Preheat oven to 350°F. Place butter in an 7-by-11-inch baking dish and bake until melted, 8 to 10 minutes. Meanwhile, stir flour, chocolate chips, 4 tablespoons brown sugar, 2 tablespoons granulated sugar, 2 tablespoons cocoa and 1/4 teaspoon salt in a large bowl; set aside.

  • Remove the hot baking dish from oven; leave the oven on. Whisk coconut milk, oil and vanilla in a small bowl. Add to the flour mixture; fold to combine. Dollop the mixture evenly onto the melted butter in the baking dish (do not stir).

  • Combine the remaining 2 tablespoons brown sugar, 3 tablespoons granulated sugar, 3 tablespoons cocoa and 1/4 teaspoon salt in a small bowl. Sprinkle evenly over the mixture in the baking dish. Pour boiling water evenly over the mixture in the baking dish (do not stir).

  • Bake until the cobbler is bubbly around the edges and set on top, 26 to 30 minutes. Let cool slightly before serving, about 5 minutes.

Tip

Self-rising flour is flour combined with a leavener (baking powder) and salt. To make your own, combine 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
