Chocolate Cobbler

This chocolate cobbler delivers ooey-gooey chocolate fudginess in every bite. The coconut milk adds creaminess and a hint of natural sweetness. Be sure to use self-rising flour to ensure the cobbler bakes correctly. Serve with a scoop of vanilla ice cream.

Ingredients

  • ¼ cup unsalted butter

  • cup self-rising flour (see Tip)

  • ½ cup dark chocolate chips

  • 6 tablespoons light brown sugar, divided

  • 5 tablespoons granulated sugar, divided

  • 5 tablespoons unsweetened cocoa powder, divided

  • ½ teaspoon salt, divided

  • cup well-shaken light coconut milk

  • ¼ cup canola oil

  • 1 ½ teaspoons vanilla extract

  • 1 cup boiling water

Directions

  1. Preheat oven to 350°F. Place butter in an 7-by-11-inch baking dish and bake until melted, 8 to 10 minutes. Meanwhile, stir flour, chocolate chips, 4 tablespoons brown sugar, 2 tablespoons granulated sugar, 2 tablespoons cocoa and 1/4 teaspoon salt in a large bowl; set aside.

  2. Remove the hot baking dish from oven; leave the oven on. Whisk coconut milk, oil and vanilla in a small bowl. Add to the flour mixture; fold to combine. Dollop the mixture evenly onto the melted butter in the baking dish (do not stir).

  3. Combine the remaining 2 tablespoons brown sugar, 3 tablespoons granulated sugar, 3 tablespoons cocoa and 1/4 teaspoon salt in a small bowl. Sprinkle evenly over the mixture in the baking dish. Pour boiling water evenly over the mixture in the baking dish (do not stir).

  4. Bake until the cobbler is bubbly around the edges and set on top, 26 to 30 minutes. Let cool slightly before serving, about 5 minutes.

Tip

Self-rising flour is flour combined with a leavener (baking powder) and salt. To make your own, combine 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
