Delicious. Potatoes were nice and crispy. Sauce was fantastic. I was a little worried about so much fish sauce, but I wouldn't adjust the ingredients at all.
It is now a weekly dish at my house. I have also premade them, wrapped in foil to heat up on the campfire. Yummy.

The sauce is a brilliant and flavorful way to brighten the heavier potato. Its acidic and complex with the peanuts adding just the right amount of savory. This recipe is a real crowd pleaser and has been a hit with everyone I've made it for. I was all but commanded to stay subbed to Eating Well when I told a family member where I got this recipe from! lol
To make this vegan/plant-based simply sub the fish sauce for soy sauce :)
