Roasted cauliflower gets slathered with Buffalo sauce in this spicy, tangy side dish. Enjoy it as a peppy accompaniment for roasted chicken or on its own with a side of ranch or blue cheese dressing for dipping.
Position rack in upper third of oven; preheat to 425°F. Line a large rimmed baking sheet with parchment paper. Toss cauliflower, Buffalo sauce and oil together in a large bowl. Arrange the mixture in an even layer on the prepared baking sheet. Roast until the cauliflower starts to brown and is almost tender, 12 to 14 minutes. Sprinkle evenly with cheese. Roast until the cauliflower is tender, 8 to 10 minutes.
