So good!!! I was skeptical because I had never had eggplant outside of eggplant parmesan, but oh my gosh! I will definitely be making this again. I added some Sumac seasoning to bring in even more Greek flavor.
The recipe calls for 3/4 cup feta but yet says sprinkle 3 Tbl of feta on each. I don't see anything that would use the entire 3/4 cups.
This is a fabulous recipe. Everyone at the table devoured it. I did make some changes, I added 1 lb ground beef and 1 cup or so of rice. Scrumptious!!!
This is a great way to use eggplant from my garden. The first time I made it I followed the recipe almost exactly. I used garden tomatoes instead of canned tomatoes. It was a great side dish. My daughter made it with ground sausage and added carrots instead of olives. I think you could do a lot with it--add shredded chicken or brisket with BBQ sauce and cheddar and so on.
I loved this hearty vegetarian dinner!
