This is my new FAVORITE RECIPE...! It is delicious, healthy and easy to make! I made a few changes.....I added the garlic to the warm pasta,because I think garlic is better uncooked. I lightly wilted the spinach in a pan w/olive oil, and added the drained roasted red peppers and combined with pasta. I added calmetta olives, and a banana pepper and a few small tomatos from my garden! I served this room temp. and it was a perfect dinner!
This recipe is really delicious as written. I make this frequently and it is so easy! Sometimes I add grilled chicken to it as well.
I made it exactly as it’s written and it was amazing! I wouldn’t change a thing. Even my man who feels like he needs a meat with every meal was very happy and satisfied. Will make this often.
Excellent recipe! Followed recipe but made two additions (per our tastes): added some kalamatas, sliced into rings, and a jar of water packed artichoke hearts, drained and cut in half. Also used 16 oz. of fresh baby spinach since that is how the package came, roughly chopped/sliced. Do not cut back on the olive oil-may seem like a lot but it is coating a pound of pasta and vegetables. Also good cold the next day.
This is a wonderful easy pantry pasta -- just the kind of recipe I need right now. I added a little extra olive oil, because I do that with everything.
