Apple Butter
This easy homemade apple butter with warm spices is wonderful slathered on toast and biscuits, stirred into yogurt, smeared on sandwiches, dolloped on a cheese plate or served alongside pork chops or chicken. Choose your favorite variety of apple--Honeycrisps, Fujis and Galas all work well. The natural sweetness of apples means you don't have to add too much sugar for a perfectly sweet apple butter.

  • Combine apples, cider and sugar in a large saucepan; bring to a boil over medium-high heat. Reduce heat to medium; simmer, covered, until the apples are very tender, about 20 minutes, stirring every 5 minutes.

  • Transfer the mixture to a food processor; blend until smooth, about 30 seconds. Return the mixture to the saucepan. Stir in cinnamon, salt, ginger, cloves and nutmeg. Cook over medium heat, partially covered and stirring occasionally, until thickened, about 20 minutes. (Note: Be sure to keep the pan partially covered to protect yourself and your counter from splatters.) Remove from heat; stir in lemon juice. Transfer to a shallow dish to cool completely, about 1 hour. Refrigerate in an airtight container for up to 2 weeks.
