I'd be willing to try this recipe again if someone can share tips/tricks on achieving a good crunch.
I followed the recipe exactly as written (left them out on the counter for two hours before frying; rolled under paper towels; etc). I don't know if I should try a higher temp? I cooked at 400 degrees and I extended cooking time to 18 min, hoping to get them crunchy. However, the oven started to smoke a little (I'm guessing from oil splashing when I shook the basket 2x), so I removed the chickpeas from the oven.
The chickpeas are oily, greasy and soft. Absolutely no crunch whatsoever, which is disappointing because I love crispy chickpeas. The flavor is good but the texture missed the mark.
Such an easy and yummy snack to have on hand. Super healthy too. Dreaming of all sorts of flavor combos!
