  • Prepare Blue Cheese Dressing: In a small bowl, combine yogurt, buttermilk, buffalo wing sauce and Worcestershire sauce. Stir in blue cheese. Cover with foil or plastic wrap and chill until ready to serve. Using a vegetable peeler, cut celery stalk and carrot lengthwise into thin ribbons; set aside.

  • Prepare Buffalo-Spiced Steak Salad: Trim fat from meat. For rub, stir together brown sugar, salt, garlic powder, paprika, chili powder, cayenne pepper and black pepper in a small bowl. Sprinkle mixture evenly over meat; rub in with your fingers. Marinate at room temperature 10 minutes.

  • For a charcoal or gas grill, place meat on the grill rack directly over medium heat. Cover and grill 17 to 21 minutes for medium (160 degrees F), turning once halfway through grilling. Thinly slice meat diagonally across the grain.

  • Divide mixed greens among four serving plates. Top with celery and carrot ribbons and meat slices. Serve with dressing and, if desired, garnish with celery leaves.
