Sloppy Joes are a classic! Make this healthier-for-you version, and top with homemade Honey and Spice "pickles" for added zest.
To prepare Honey and Spice "Pickles": In a medium bowl, combine buttermilk, cider vinegar, honey, salt and cayenne pepper. Add cucumber and onion; toss to coat. Cover and chill 4 to 24 hours, stirring occasionally. Drain before serving.
To prepare the Sloppy Joes: In a large skillet, cook beef, mushrooms, onion, green sweet pepper, and garlic over medium heat until meat is browned. Drain off fat, if necessary.
Stir in the tomato sauce, brown sugar, mustard, vinegar, chili powder, salt, and black pepper. Cook and stir 1 to 2 minutes or until heated through.
Drain pickles. Serve meat mixture in buns with pickles.
