For dressing, in a blender combine 1 cup of the strawberries, the oil, honey, vinegar and salt. Cover and blend until smooth. If desired, cover and chill up to 48 hours.
Arrange arugula on a large platter. Top with the remaining 1 cup strawberries, the avocado and onion. Before serving, drizzle with dressing and sprinkle with cheese.
