To make homemade jerk seasoning, in a small bowl, combine 1-1/2 teaspoons dried thyme, 1/2 teaspoon ground allspice, 1/2 teaspoon ground black pepper, 1/8 teaspoon salt, 1/8 teaspoon ground cinnamon, and 1/8 teaspoon cayenne pepper.
