Ingredients: 1 cup white whole-wheat flour; 1 teaspoon baking powder; 1 teaspoon ground cinnamon; ½ teaspoon salt; ⅔ cup packed light brown sugar; 6 tablespoons unsalted butter, melted; 1 large egg; 1 ½ teaspoons vanilla extract; 1 cup old-fashioned rolled oats; ⅓ cup bittersweet chocolate chips, melted; ¼ cup slivered almonds, halved or cut into thirds

Step 1

Preheat oven to 350 degrees F. Coat 2 baking sheets with cooking spray.

Whisk flour, baking powder, cinnamon and salt in a medium bowl.
Step 3

Whisk brown sugar, butter, egg and vanilla in a large bowl. Add oats and the flour mixture; stir with a wooden spoon until well combined. Drop the dough by tablespoonfuls onto the prepared baking sheets, leaving about 2 inches between each cookie. (There should be 12 cookies on each baking sheet.) Pat each cookie mound into a 2-inch circle with your fingers or a spoon.

Bake, one sheet at a time, until the cookies are golden brown on the bottom, 12 to 14 minutes. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Step 5

When all the cookies have cooled, place the melted chocolate in a small sealable plastic bag. Cut a tiny corner off the bag and pipe a horizontal "belt" on each cookie. Place 5 or 6 pieces of almond on each belt to resemble Chewbacca's belt.
