This recipe is delicious. I didn't have any fresh butternut squash so I used the frozen butternut squash noodles was still really good. My husband has asked for it again and we just had it last week. Can't wait to try it with fresh squash.

You don't even miss the pasta because the squash is so filling and satisfying. Definitely look for a squash with a big neck because that's the part you spiralize (not the bulb). The first time I tried spiralizing butternut the neck was so small and I barely got any noodles out of it.

This was really good we were totally surprised! We haven t had a lot of zoodles in our life we really don t eat too much regular pasta either but in the spirit of trying to be healthier I picked up some of these butternut squash zoodles and searched for a recipe which thankfully brought me here! I love carbonara and his hit all the right notes without leaving us feeling denied of anything. We did add a pinch of crushed red pepper to the veggies before they roasted but other than that we just enjoyed it as is. This will definitely go in the rotation you should try it!!!
This recipe was so easy to make and my husband and I both loved it. I did add peppers with broccoli and may next time also add cauliflower too otherwise made recipe as is. Will definitely make it again.
