This recipe was as bland and it sounds and awkward to eat. I added a little garlic salt and pepper to the beans and kale. I will try the combination again over mashed sweet potatoes with extra flavor boosters.
This was as one reviewer said even better then expected. I had great sweet potatoes-they are called Garnets and they are so good. I had some left over black beans and newly steamed beet greens so I did use those. I cut back amounts to keep calories a bit better--more like 225 for entire amount. I did use an Oasis roasted red pepper hummus that has 28 calories per serving and it was just perfect on this. I didn't add water to it but will try that next time. Could eat this everyday! Thank you.
It's delicious. Next time though, I will use a medium potato, as a large one is just a bit much. I also just put the beans and kale in a microwave safe container and heated them on High for 2 minutes. Made a little extra garlic hummus dressing because I like it! Super easy.
very satisfing ate 2x in one day once for breakfast as is second for dinner but used chili beans the spicyness of the chili seasoning is a. winner!!....add a dollop of greek yogurt for hummus and enjoy... now i'm going to try all kinds of different combos
