The combination of tangy yogurt, sweet pineapple, and vanilla bring out the best in fresh fruit to make this healthy dessert or snack.
In a medium bowl, stir together yogurt, undrained crushed pineapple, and vanilla. Cover and chill for 1 hour or up to 2 days.
To serve, spoon 1/4 cup of the yogurt mixture into each of the 8 dessert dishes. Add about 2/3 cup of the mixed fruit to each; top with remaining yogurt mixture.
