A baked russet potato is topped with roasted cherry tomatoes, cottage cheese, and fresh chives for an easy, weeknight side dish or light dinner.
Preheat oven to 425 degrees F. In a 2-quart baking dish combine the tomatoes and olive oil. Roast for about 20 minutes or until tomatoes burst open. Top potato with cottage cheese, roasted tomato mixture, and chives.
