Preheat oven to 300 degrees F. Rinse, dry, and remove stems from kale. Cut kale into pieces (about 8 cups loosely packed).
In a large bowl toss kale and oil together until kale is lightly coated. Sprinkle with lemon-pepper seasoning and salt; toss to coat.
Place a baking rack on each of two baking sheets. Arrange kale in a single layer on the racks. Bake about 20 minutes or until kale is crisp. Cool slightly before serving.
