I wasn't a big fan of this and I took all the other reviewers advice. I just thought the whole thing was very bland. I added more garlic some onion more tomatoes crushed red pepper italian seasoning and I used herb goat cheese. Nothing. Not enough flavor at all. I really wanted to like it too but it just didn't work out for me.
With a little modification this recipe is great. It definitely needs a little zip. I like to add some red pepper flakes. Sometimes I'll put in jalepeno chicken sausage which adds nice texture and spice. Size of the sweet potato is important! A small one goes a long way!
Delicious! Flavoursome! After reading other user comments I was a bit afraid to follow the recipe as given. I was tempted to try adding flavour as so many other users recommended. I resisted and am so happy. This was an amazing dish - so quick to prepare and I think the flavours are not only strong but delicious! For those who called the dish bland I can only assume they were either not using real goat cheese or not using fresh tarragon. The combination of these two ingredients was just amazing. And I was wary - I really wanted a more traditional italian herb to use ie: oregano or thyme. I'm very glad I didn't. The dish was perfect. Can't wait to have it again. I actually think this dish exceeded my expectations -- my husband agreed that it was "more than the sum of its parts." For those who think it's bland I imagine they are not used to delicate flavors and having things really taste of just themselves. My two little ones ages 3 and 1 both ate this very happily as well. I was pleased that the shredded sweet potato clings to the pasta which is nice texturally for the grown-ups but also means that little ones can't pick the dish apart -- each time they eat a noodle they'll almost certainly have to be eating the sweet potato with it. All in all a very surprising "keeper" and as a bonus quite budget-friendly!
