  • Position rack in lower third of oven; preheat to 450 degrees F.

  • Combine oil, herbs, lemon zest, salt and pepper in a large bowl. Add beets; toss to coat with the seasoning mixture.

This is a delicious dish and simple to make. I used red beets and made this with fresh Rosemary. The natural sweetness of the beets was intensified when roasted. Delicious beets I made this with some golden beets I bought at my farmer's market. I'd never cooked beets before but thought that I would give it a try. I'm so glad that I did!
