Hey! Some of us are gluten-intolerant; we HAVE to use CORN tortillas - and you could use more egg whites than yolks to reduce calories and up the protein...I will try this for breakfast tomorrow as I am tired of eating toast from gluten-free bread. A tiny bit of sliced avocado would also add some good fats to this item...
I made these with liquid eggs not substitute. For the most part it was pretty good only thing I'll do different next time is use flour tortillas. I made them with the corn ones this time but the corn tortillas just have a strange taste to me. I ended up just eating the insides and leaving the tortillas. Cons: corn tortillas

I rated this poorly because the nutrition info was WAY off. 2 Small corn tortillas can vary from 80 calories to 120... Most I checked did have 2 grams of fiber... No way this recipes has 17 grams of protein. My highest calculation was 15 using a very high protein cheese... more realistic would be 13 grams of protein. The salsa is the healthiest ingredient in this recipe why limit it to 1 tablespoon? Your recipes look interesting but I really do not feel like taking the time to double check all your calculation... If you are going to offer this type of service.... DO it right... or not at all.
Great idea but can you make it gluten free and non-GMO? I too struggle with what makes a healthy breakfast. I'm going to try making this with organic eggs and cheese and gluten free tortillas (which are not whole grain) but I have no idea what the nutrient and calorie content would be. Please think of gluten free organic breakfast recipes please. Pros: Great idea and sounds yummy! Cons: Uses GMO based foods (corn) which may also have gluten.
I use flour tortillas (they roll up very well) after heating them in the microware and I add 2 tablespoons fat free refried beans. Good doesn't even begin to describe these breakfast tacos.
I loved this recipe but I choose to use street taco tortillas as they do not fall apart. Just heated them on the burner.
ya this is a good recipe i've been doing this forever and a day...however...corn tortillas...really? you want people to get even more corn in their diet as if America doesnt get enough corn in the first place? I'd say no corn tortillas i always use whole wheat tortillas and REAL eggs for the NATURAL vitamin and mineral benefits they provide. If possible make your own salsa too people its not hard to do and you can easily make sure the ingredients are organic...all those preservatives pesticides growth hormones and food dyes arent good for us at all. so ya make a few modifications and you have an excellent recipe here.
Quick and Easy I too like so many other of the commentors am not crazy about the egg substitute so I mix one egg with 2 TBSP of substitute. These are better on flour tortillias I think. Try mixing in a bit of chopped smoked brisket for a truely delightful breakfast treat!
