Slow-Cooker Dal Makhani
Using a slow cooker for this dal curry recipe is brilliant--the lentils cook until they're perfectly tender. For the creamiest results, use whole urad dal (versus split), which you can get online or at Indian markets. This particular bean breaks down beautifully, giving the dish its rich, creamy texture. For a stovetop variation, see below. Serve it over rice with Indian-style green chutney and a side of plain yogurt. Source: EatingWell Magazine, September/October 2016

Egyptian Lentils, Rice & Pasta (Koshari)
This kitchen-sink of a vegetarian dish was most likely invented in Egypt in the mid-1800s when Cairo was a major multicultural trade port, which could explain the similarities to Italian spaghetti as well as the Indian rice-and-lentil comfort food khichdi. Three toppings--a spicy tomato sauce (shatta), crispy onions and a garlicky vinegar (dakka)--are added to the koshari before serving, but in Cairo most people like them in separate bowls so they can season their bites one at a time. Very Green Lentil Soup
Lentils seem to go well with just about anything, and here they play well with a collection of greens and some cumin and coriander to add a gentle spicy note to this soup recipe. The result is a hearty winter soup with layers of flavor. Both French green lentils (available in natural-foods stores and specialty markets) and more commonly available brown lentils are delicious in this soup. The French green lentils hold their shape better when cooked, while brown lentils will start to break down a bit. Source: EatingWell Magazine, Soup Cookbook

Mashed Legumes with Onion, Capers & Radicchio (Sympetherio)
Radicchio, capers and onions brighten up this mashed lentil dish. Sympetheros means "father of one's son- or daughter-in-law," probably implying the "marrying" of different legumes in one dish. It's a meze served all over Greece. This recipe is inspired by the version Dimitris Mavrakis serves at his restaurant Kritamon in Archanes, near the spectacular Knossos archaeological site on Crete. Source: EatingWell Magazine, March 2020

Green Lentil Curry Masabacha
Masabacha is a thick stew that in this case serves as the backbone to a hearty and healthy breakfast bowl. But the real star here is the silky whipped tahini sauce, made by simply pureeing tahini and water with garlic and lemon juice until the mixture is transformed into a light, spreadable sauce. Serve with warm pita and some vegetables for dipping. Source: EatingWell Magazine, May 2019

Messer Wot (Spiced Lentils)
Red lentils get plenty of heat from berbere spice in this Ethiopian recipe. You can balance the heat by stirring in some chopped tomato before serving. Serve as a satisfying vegan side dish along with other traditional recipes, such as kinche (cracked wheat) and fossolia (Ethiopian-style green beans). And don't forget injera, a traditional crêpe-like bread common in Ethiopia. Look for berbere in specialty grocery stores or online. Source: EatingWell Magazine, January/February 2018
