Apple Crisp with Cranberries

Sticking to its food-waste mission, L.A. Kitchen created this dessert to work with almost any fruit you have on hand. We've done it here with pears and apples, but you can use berries or even tropical fruits instead. The addition of dried fruit adds a concentrated hit of flavor you won't get from fresh alone. Source: EatingWell Magazine, November/December 2018

Almond Burfi

View Recipe this link opens in a new tab

Burfi is an Indian sweet treat often served and gifted during Diwali and other festivals--or whenever one has a craving. Usually made with either condensed milk or ghee (or both), it's a decadent sweet that's not quite a cookie, not quite a candy, but something in between. It's often described as a kind of fudge. Throughout South Asia and the diaspora, different families have their own unique ways of making it, and that's the beauty: from the size and shape to the toppings and mix-in spices, everything can be customized. Even chocolate burfi is a thing! This version uses nonfat dry milk powder, almond flour and less sugar than most other burfi recipes for sweet satisfaction that's just a bit lighter, so you can feel good about serving up seconds. Source: EatingWell.com, October 2019

Get all the tropical flavors you love in a piña colada in this creamy dairy-free dessert. This ice cream alternative gets its sweetness from pineapple and coconut and is just as delicious with or without the optional rum. Either way, it's sure to put you in a beachy state of mind--not bad for a treat that takes just 10 minutes to whip up in your food processor. Source: EatingWell.com, June 2019

This grown-up version of ice cream cake is a little sweet and a little salty. The yogurt cake gets its distinct flavor from freeze-dried banana slices--they can be pulverized into a powder (unlike regular dried bananas, which have a chewy texture). Source: EatingWell Magazine, May 2020

No one will guess that this moist, decadent devil's food cake is vegan. Aquafaba, the liquid from canned chickpeas, is the secret to whipping up the gloriously light buttercream-like frosting on this vegan chocolate cake. Source: EatingWell Magazine, May 2020

Vegan Pumpkin Cookies

7281748.jpg
View Recipe this link opens in a new tab

The pumpkin puree in these delicious vegan pumpkin cookies gives them a great orange color and fall flavor and also acts as the "egg" to help bind everything together. Coconut oil takes the place of butter in these cookies and should be solid when you use it--if it's not, stick it in the fridge for a few hours until it firms up. When we were developing this recipe, tasters said they wouldn't have known the cookies were vegan if they hadn't been told. We call that a win! Source: EatingWell.com, November 2019

Turn fresh strawberries and blueberries into a refreshing layered dessert with graham crackers and a sweetened ricotta filling. Fresh strawberries are lightly cooked for the "sauce," and a smattering of fresh blueberries finishes the dish. No blueberries? Substitute any fruit to change up your flavor options. Source: EatingWell.com, May 2018

Apple Cobbler

Apple Cobbler
View Recipe this link opens in a new tab

This easy apple cobbler recipe takes just 15 minutes of active time to prep, then it's a hands-off affair as it bakes up to bubbly goodness. Granny Smiths add a nice tartness to the cobbler and play nicely off the Honeycrisps. You could swap other sweet apples, such as Gala or Fuji, for the Honeycrisps. The part of the cake topping coming in contact with the apple mixture stays moist while the top gets crispy--the perfect combo of textures. Serve as-is or with vanilla ice cream for a classic fall dessert that can't be beaten. Source: Eatingwell.com, June 2019

Almond Cake with Pineapple-Rum Filling

This cake is a spin on bizcocho mojadito, which is often served at celebrations in Puerto Rico and the Dominican Republic. We made this gluten-free almond cake using a cup-for-cup blend with xanthan gum, such as King Arthur Gluten-Free Measure for Measure Flour. If gluten-free isn't your priority, you can substitute 1 cup all-purpose flour and 3/4 cup white whole-wheat flour for the GF flour. Source: EatingWell Magazine, May 2020

Brûléed Blood Oranges with Yogurt & Cardamom

Fresh blood oranges are so sweet they almost create their own caramel under the broiler--a little brown sugar on top seals the deal. A hint of cardamom enhances their aroma. Once you scoop out and eat the caramelized sections, squeeze the remaining blood orange juice over the yogurt. Source: EatingWell Magazine, January/February 2020

Brown Butter Apple Pie

7115897.jpg
View Recipe this link opens in a new tab

This homemade apple pie recipe has a simple and classic flavor, with fresh apples, spices and butter that's been sizzled until it's brown and nutty. The top crust is where you have the opportunity to add a touch of pizazz. Here we suggest cutting the dough into leaf shapes for an autumnal motif, but you could cut any shape you want. Source: EatingWell Magazine, November 2019
