Cheese-&-Spinach-Stuffed Portobellos

Cheese & Spinach Stuffed Portobellos
View Recipe this link opens in a new tab

Here we take the elements of a vegetarian lasagna filling--ricotta, spinach and Parmesan cheese--and nestle them into roasted portobello mushroom caps. The recipe works best with very large portobello caps; if you can only find smaller ones, buy one or two extra and divide the filling among all the caps. Serve with a tossed salad and a whole-wheat dinner roll or spaghetti tossed with marinara sauce. Source: EatingWell Magazine, March/April 2009

Beer-Glazed Chicken with Grilled Vegetables

6610037.jpg
View Recipe this link opens in a new tab

Need a new chicken dinner idea? Try this grilled chicken and vegetable dish from chef Rick Bayless. Grilling the chicken and summer vegetables is a no-brainer, but in colder months, you may wish to move indoors and roast the chicken, along with some root vegetables. Whatever the weather, it's worth seeking out piloncillo for the beer glaze. This unrefined sugar used in Mexican cooking is made from evaporated cane juice. Its complex caramelized flavor balances any bitterness in the beer. Look for it in Latin markets and online. Source: EatingWell Magazine, June 2019

Portobello mushrooms stand in for meat patties in this recipe for veggie burgers with all the fixings. Grilled Fish Tacos

Grilled Fish Tacos
View Recipe this link opens in a new tab

Instead of deep-frying the fish for these fish tacos, we coat the fish with a flavor-packed chile rub and grill it instead. Make sure the fillets are no more than 1/2 to 3/4 inch thick so they cook quickly. Sometimes flipping fish on the grill can be tricky since the fish can stick to the grill or fall apart. The solution is to invest in a grill basket that easily holds 4 to 6 fish fillets and secures the fish in the basket for easy flipping. If you don't have a grilling basket, make sure the grill is hot and well oiled before adding the fish. Source: EatingWell Magazine, May/June 2010

Grilled Lime Chicken & Steak with Herb & Arugula Salad

This recipe involves one of our favorite make-ahead hacks: let the chicken and steak marinate in reverse. In this recipe, you'll pour a punchy, citrusy dressing over the meat right after it leaves the grill, so it soaks up the bright vinaigrette as it cools. Better yet, reverse-marinating keeps the grilled meat from drying out, even when kept in the fridge overnight. Source: EatingWell Magazine, July/August 2018

Wedges of juicy watermelon topped with nondairy coconut yogurt and berries make for a crisp and refreshing dessert. To feed a crowd, leave the wedges blank and let guests add their own toppings to the yogurt. Source: EatingWell.com, January 2019

Peach & Blueberry Cobbler

This is a healthier version of a traditional cobbler, with canola oil in place of some of the butter and whole-wheat flour instead of all-purpose flour. Unlike more classic biscuit-topped cobblers, the peaches and blueberries are nestled into a tender batter that swells around the fruit as it bakes. Other fruits may be substituted. It's especially beautiful when baked in and served right from a cast-iron skillet. Source: EatingWell Magazine, July/August 2008

There's definitely a sushi vibe to these kid-friendly wraps, which are stuffed with vegetables, cheese and hummus and then rolled and sliced. Serve them with store-bought green goddess, a creamy herb-filled dressing, to take it up a notch with ease. They look impressive but they're easy enough for kids to assemble themselves for an easy lunch or dinner. Source: EatingWell Magazine, May 2019
