With the holidays in full swing, I for sure have been having my fair share of yummy cookies and scrumptious cocktails (like the Boozy Hot Chocolate with Bailey’s & Chambord you’ll see below). But the treats are what I love about the holiday season! So, they’re staying, and to help balance out my days, I’m focusing on lightened-up dinners, featuring lots of yummy veggies, that are still as fast and easy as ever.

The 20-Minute Creamy Italian Chicken Skillet starts the week off with zucchini, diced tomatoes, chicken and just a little bit of cream cheese. Make sure you have a piece of bread handy to scoop up any of the creamy tomato sauce leftovers! And Monday’s Mediterranean Chickpea Quinoa Bowl is one of the best recipes we have—the roasted red pepper sauce that goes on top is insanely delicious. I’d suggest you double the recipe for the sauce, so you have leftovers to have with pita chips. 

The veggie-packed Vegan Coconut Chickpea Curry is another winner, with bell peppers, zucchini, spinach and jarred curry sauce, which helps keep this delicious dinner at 20 minutes. And last but not least, we have Friday’s Pesto Ravioli with Spinach & Tomatoes. With only five ingredients—including a whole package of spinach—this speedy dinner is a healthy and comforting way to finish the week.

Chocolate-Peppermint Energy Balls

These festive no-cook energy balls have all the flavors you love in peppermint-chocolate bark but in healthy snack form. This delicious treat gets its sweetness from dates, plus a little chocolate and the crushed candy cane topping. You can make a batch for yourself and another to drop on friends’ and neighbors’ doorsteps—everyone is sure to love this yummy pick-me-up!

Spiked Hot Chocolate with Bailey's and Chambord

This boozy hot chocolate gets spiked with Bailey’s Irish Cream and a little Chambord (raspberry liqueur) for a delicious 3-ingredient cocktail. It’s delicious as-is but gets even better with a little whipped cream on top—yum!
