We’ve really turned the corner here in Vermont—the colorful leaves are pretty much gone from the trees, which is a little sad, but we got our first snow, which is exciting! Basically, what this means is that I’ll be craving soup just about every day until spring. So, I’m kicking off soup season with a week of 20-minute meals featuring yummy soups and other speedy dinners. Your Meal Plan Last week’s Veggistrone recipe was so delicious and I loved that it made enough leftovers for lunch and some to stash away in the freezer. Plus, I ate way more veggies than usual because of it, which is a win. So, I’m setting myself up with another veggie-packed soup for this week—the Mexican Cabbage Soup. This one has a little spicy kick from poblano peppers and chipotle peppers in adobo sauce and is ready in just 20 minutes. Tuesday’s Easy Butternut Squash Soup also comes in at 20 minutes (thanks to pre-cut butternut squash) and is a creamy, cozy dinner you’ll want to make all winter long. We’ve got one more 20-minute soup on for the week—the Easy Italian Wedding Soup—then a few more delicious 20-minute meals to get you to Friday. The Chicken Cutlets with Sun-Dried Tomato Cream Sauce is a favorite in my house. The sun-dried tomato sauce is really easy to make and requires only a few ingredients, and the thinly sliced chicken cutlets cook quickly, so dinner is done in no time at all! Sunday: Mexican Cabbage Soup with cornbread Monday: Chicken Cutlets with Sun-Dried Tomato Cream Sauce over cooked orzo Tuesday: Easy Butternut Squash Soup with toast topped with apple slices and Cheddar cheese Wednesday: Roasted Red Pepper, Spinach & Feta Penne Pasta Thursday: Easy Italian Wedding Soup (Go for frozen meatballs to keep this soup speedy) Friday: Salmon Tacos with Pineapple Salsa Get the Printable Shopping List Big Batch Snack These festive fall muffins combine pumpkin and chocolate to create a delicious bite-size snack you can enjoy all week long. Plus, they’re easy to make. Just stir all of the ingredients together in a bowl—no mixer required—then bake, and in no time you’ll have yourself a yummy snack.
