I just can’t deal with having so many to do each day, so I’m bringing back the one-dish dinner theme for this week of recipes. And with snow in the forecast where I live in Vermont, cozy is the name of the game. However, assuming that my pre-dinner snack will likely be leftover Halloween candy for the foreseeable future, I’m keeping these dinners on the lighter side (read: veggie-packed). Your Meal Plan We start this week off with quite possibly our most veggie-packed recipe ever—Veggistrone. This cozy soup has the classic flavors of a minestrone, plus TONS of vegetables and plenty of well-deserved 5-star reviews. Another bonus: this recipe makes enough for dinner and lunch for the week. To help cut down on all the chopping, go for pre-cut fresh or frozen veggies where possible. Another dinner winner in the lineup is the One-Pot Garlicky Shrimp & Spinach, which uses a whole pound of spinach and also happens to be ready in a quick 25 minutes. Paired with some brown rice, you’ve got yourself a healthy, wholesome meal. The rest of this week’s light yet cozy dinners follow suit, from the Creamy Mushroom, Chicken & Asparagus Bake to the Tuscan White Bean Soup and Skillet Chicken Parmesan, you just can’t go wrong.
