I’m still on a doing-the-dishes strike. I just can’t deal with having so many to do each day, so I’m bringing back the one-dish dinner theme for this week of recipes. And with snow in the forecast where I live in Vermont, cozy is the name of the game. However, assuming that my pre-dinner snack will likely be leftover Halloween candy for the foreseeable future, I’m keeping these dinners on the lighter side (read: veggie-packed).
Your Meal Plan
We start this week off with quite possibly our most veggie-packed recipe ever—Veggistrone. This cozy soup has the classic flavors of a minestrone, plus TONS of vegetables and plenty of well-deserved 5-star reviews. Another bonus: this recipe makes enough for dinner and lunch for the week. To help cut down on all the chopping, go for pre-cut fresh or frozen veggies where possible.
Another dinner winner in the lineup is the One-Pot Garlicky Shrimp & Spinach, which uses a whole pound of spinach and also happens to be ready in a quick 25 minutes. Paired with some brown rice, you’ve got yourself a healthy, wholesome meal. The rest of this week’s light yet cozy dinners follow suit, from the Creamy Mushroom, Chicken & Asparagus Bake to the Tuscan White Bean Soup and Skillet Chicken Parmesan, you just can’t go wrong.
Also, Happy Halloween! 🎃
Wednesday: One-Pot Garlicky Shrimp & Spinach over brown rice
Thursday: Tuscan White Bean Soup (opt for 4 cans of beans in place of dried beans)

Start the day off on the right foot with these healthy and satisfying muffin-tin eggs. The savory mushrooms paired with spinach and cheese is a delicious combo and when you meal-prep these ahead of time, you get to enjoy them every day of the week!

This striking red and black margarita is the perfect cocktail to celebrate Halloween. The deep red color comes from hibiscus tea paired with pomegranate juice, and the special black salt makes this drink feel extra Halloween-y.
