It was not that long ago that I didn’t want to use the stove for anything, in hopes that grilling instead would keep the house cool during those oh-so-hot summer nights. But now, I’m putting it to work with all the cozy fall recipes I’m cooking up. This week’s dinners will be no different with satisfying stove-top soups and easy sheet-pan meals, plus a couple slow-cooker recipes that will make your kitchen smell amazing! Your Meal Plan Of all the winter squash varieties, my favorite is acorn squash. I don’t exactly know what it is that makes me love it so much, but I do know that everytime I eat it I think, “I need to make this more”. It’s delicious roasted and topped with some butter and salt and gets even more exciting when you stuff it with veggies, sausage and cheese, like we did in Tuesday’s tasty sheet-pan Southwestern Stuffed Acorn Squash—yum! I’m also super excited about the Sheet-Pan Sesame Chicken & Broccoli with Scallion-Ginger Sauce and Slow-Cooker Mushroom Soup with Sherry. They’re both recipes I haven’t had since the winter and let me tell you—they’re amazing! And I can’t leave out the Smoky Maple-Mustard Salmon. It’s my absolute favorite way to eat salmon and is ready in just 15 minutes. Trust me, you’ll love it and all the other satisfying dinners in this week’s line-up. Sunday: Sheet-Pan Sesame Chicken & Broccoli with Scallion-Ginger Sauce Monday: Slow-Cooker Mushroom Soup with Sherry with toasted baguette slices on the side Tuesday: Southwestern Stuffed Acorn Squash Wednesday: Smoky Maple-Mustard Salmon with Cheesy Roasted Cauliflower (add the salmon to the cauliflower sheet-pan 10-minutes into cooking) Thursday: Slow-Cooker Pork Posole Friday: Sheet-Pan Sausage & Peppers Meal-Prep Breakfast If you’re looking for an easy breakfast the whole family will love, these Easy Loaded Baked Omelet Muffins are them. They’re loaded with broccoli, bacon, scallions and cheese (YUM!) but you can really add in whatever flavor combos you’d like. Make a batch ahead of time and breakfast is ready for the week! This creamy, coffee-spiked drink is super easy to make and only requires 3-ingredients—vodka, Kaluah and heavy cream (milk or a dairy alternative also works). You really can't go wrong with it!
