A whole lot sure has happened in this past year but one thing I am so thankful for is to have had the chance to connect with you all! So, this week, we’re celebrating with super-easy and delicious recipes to celebrate Labor Day Weekend (safely) and to help us all ease into the new fall season. Your Meal Plan This also happens to be the week that my family and I head down to the Jersey shore for a little rest and relaxation and let me tell you—I’m ready for it! I’m also very ready for all the tasty seafood and know exactly what I want to make, including Sunday’s Scallops & Cherry Tomatoes with Caper-Butter Sauce and Tuesday’s Linguine with Creamy White Clam Sauce. For Labor Day, I’m sticking with the classic—burgers! Specifically the 5-star Greek Turkey Burgers with Spinach, Feta & Tzatziki. The shore really quiets down after Labor Day, when all the kids go back to school (sending luck and love to all of you with kiddos and those who work in the schools), so dinners will follow in suit with some cozy fall classics, like the Friday’s Broccoli, Cheese & Rice Casserole with Oven-Roasted Chicken Thighs. I hope you all have a safe and happy weekend and enjoy the first official week of fall! Sunday: Scallops & Cherry Tomatoes with Caper-Butter Sauce over whole-wheat pasta or brown rice Monday: Greek Turkey Burgers with Spinach, Feta & Tzatziki Tuesday: Linguine with Creamy White Clam Sauce Wednesday: Creamy Chicken Noodle Soup with Rotisserie Chicken Thursday: Zucchini & Corn Enchiladas Friday: Broccoli, Cheese & Rice Casserole with Oven-Roasted Chicken Thighs Meal-Prep Snack I’m pretty sure the picture speaks for itself but in case you’re not yet sold, this crispy, crumbly, just-sweet-enough Apple Coffee Cake drizzled with a sweet vanilla glaze is unbelievably delicious. You’ll want to go apple ASAP to stock up on enough to make this recipe every week.
