Kate Hudson's One-Point WW Snack with Watermelon and Feta Looks Delicious
Can someone get this woman a cooking show?
In what's quickly becoming one of our favorite Instagram bright spots, the unfussy and fun @KateHudson took to Instagram again this week to demonstrate another one of her favorite WW recipes. The mom of three, actress and entrepreneur with her hand in the activewear and vodka business (whew!) has been a spokesperson for the rebranded Weight Watchers for the past couple years, and we've loved following along with her culinary adventures on Insta, including some summery mini peach pies and a 30-minute chili-rubbed salmon entree.
For her latest healthy how-to, Hudson shared a "one-point wonder" recipe that fits her WW plan and makes for a stellar summer snack. And unlike her zero-point midnight snack "recipe" that made her oldest son groan, these fruit skewers are actually more than slice and serve. But it's not too tough—Hudson even assembles part of the dish with daughter Rani in her arms.
You don't need to be too detailed about the process, Hudson says.
"The only exact measurements I'm going to do is for the olive oil and agave, because that's where your calories and points go," she explains in the video. Otherwise, she's "winging it."
We dove into the WW archives to find her recipe inspiration, and found these Watermelon-Cucumber Skewers with Feta and Mint ready to recreate. It's almost exactly like our Watermelon, Cucumber & Feta Salad in handheld portion-controlled form!
