Mindy Kaling’s Go-to Breakfast Burrito Is Perfect for Meal Prep
I am not a morning person, so I’m always on the lookout for fast and easy breakfasts. Whether it’s recipes like Muffin-Tin Spinach & Mushroom Mini Quiches or Make-Ahead Smoothie Freezer Packs, I love to meal prep breakfast in advance. And now, thanks to Mindy Kaling, I have a new recipe to try with her go-to breakfast burrito.
The actress and producer recently shared her breakfast burrito recipe on Instagram, and it looks absolutely delicious. Kaling chooses to fill her burrito with refried beans, bacon, spinach and cheesy eggs for her take on a Tex-Mex style breakfast. And while I can wholeheartedly relate to Kaling’s sentiment about being a lazy cook, the actress shared some helpful tips for the burrito-making process.
Rather than frying her bacon in a pan, which can get messy (especially if you don’t have a frywall!), she cooks her bacon on a baking sheet in the oven instead. Not only does this method cut down on flying grease, but it’s also the easiest way to cook a lot of bacon at once (learn more about how to bake your bacon). In addition to her bacon hack, Kaling also suggests cooking your scrambled eggs slowly, so they get “nice and greasy and delicious.”

The great thing about breakfast burritos is that you can add in any ingredients you want. And for Kaling, that involves sneaking in some sautéed spinach so she can start her morning off with vegetables (you could also try kale or swiss chard). She also adds in refried beans from a can, which helps cut down on prep time and ups the protein and fiber content for staying power.
Once all of her ingredients are ready, Kaling expertly rolls her burritos together and places them in a zip-top bag (which she reuses!) before they go in the freezer. Although she doesn’t give warming instructions, I would say the best option is reheating them in the microwave for about a minute. Kaling’s breakfast burrito sounds like the perfect option for when you need a hearty and filling meal in a pinch, and I can’t wait to try them out for myself!
