Yesterday on her Instagram account, the mom/actress/author invited us into her kitchen for a 10-minute tutorial of how to make one of her go-to summer salad recipes. It's short on ingredients but big on flavor, especially once you follow Diaz's instructions to salt with big, flaky pieces. "The best Christmas gift I've ever received is a big bucket of Maldon salt ($6, Amazon). Not a paid advertisement...Salt is the way to my heart," Diaz says. We're wild about the concept of combining hot and cold, crunchy and creamy ingredients. (Oh yes, and it coincidentally pairs perfectly with the white wine blend from Diaz's new Avaline line.) Plus with the salty cheese and roasted corn, this is giving us a hint of very welcome elote vibes. Instagram / @camerondiaz Cameron Diaz's Roasted Corn Salad Yield: 1 salad Ingredients 1 tablespoon Champagne vinegar 4 tablespoons olive oil, divided 1 tablespoon fresh orange juice ½ garlic clove, microplaned or grated (snag a microplane on Amazon, $10) ½ ear corn, kernels sliced off Maldon Salt, to taste ($6, Amazon) ½ cup snap peas, finely sliced Crumbled feta cheese, to taste Directions Make the vinaigrette: Combine vinegar, 3 tablespoons oil, juice and garlic. Whisk to emulsify. (Or you can toss this with one of our top 10 vinaigrette recipes that will inspire you to love salads again!) In a skillet over high heat, add olive oil, corn kernels and a pinch of salt. Pan roast corn, stirring frequently with a wooden spoon until crispy and golden brown.
