I’ve hit the point in the summer where I’m feeling slightly panicked that it’s all going by too fast! So, I’m finding myself packing in as much activity as I can—going down to the lake after work, taking evening drives to go get ice cream and jamming in plan after plan on the weekends to get my fill. While it’s been fun, I’ve definitely been doing a little too much last-minute take-out and I’m feeling it (as is my wallet). This week’s dinners, ready in 20-minutes of less, are so easy that I can make them and fit in my evening fun—no pricey take-out needed.
Your Meal Plan
If Sunday’s Grilled Peach & Brie Smothered Chicken tastes even half as good as it looks, I’m sold! Paired with a simple salad with fresh Basil Vinaigrette, this sweet, savory and cheesy chicken feels like something I’ll be making for the rest of the summer. Tuesday’s brings the oh-so-simple but impressive Scallops & Cherry Tomatoes with Caper-Butter Sauce, which is ready in 20-minutes flat, meaning there’s plenty of time for a pre-dinner bike ride, too. And what better way than to close out the week with 15-minute Build-Your-Own Grilled Cheese—I’m digging the pesto-Cheddar-tomato combination.
Monday: White Bean & Veggie Salad
Tuesday: Scallops & Cherry Tomatoes with Caper-Butter Sauce over whole-wheat angel-hair pasta
Wednesday: Chickpea & Quinoa Buddha Bowl
