I Love Using This Silicone Mold for Making Copycat Starbucks Sous Vide Egg Bites at Home
I have a longstanding obsession with Starbucks’ Bacon & Gruyère Sous Vide Egg Bites. With 300 calories and 19 grams of protein, they’re a filling and delicious breakfast option. But, unfortunately, they also pack 30% of your daily sodium allowance. Oh, and they cost $5 for two little bites, which isn’t exactly in my daily breakfast budget.
So, I set out to make a healthier and more affordable version at home. I found this tutorial, which recommended using a silicone egg tray for easier cooking and cleanup. I opted for this $9 one from Amazon and got to whisking.
I typically use cottage cheese (though you could add Gruyère, pepper Jack, feta or whatever you like) and make my egg bites in the silicone mold in my Instant Pot. (P.S.- If you don’t have an Instant Pot or other pressure cooker yet, you seriously need one. Mine has changed my meal-prep game and they’re $30 off on Amazon right now.)
Though I still love my Starbucks Bacon & Gruyère Sous Vide Egg Bites, I’ve saved a ton of money by making my own at home with my handy silicone mold. I also love that I can make them a little bit healthier by cutting down on the salt or adding extra veggies.
These egg bites are perfect for people like me who hate to eat the same breakfast every morning, because you can prep a few different versions ahead of time (think: Southwestern-style egg bites, egg bites with tons of fresh veggies or Greek-inspired egg bites), freeze them and heat them up in the microwave when you’re ready to eat. And unlike some other egg dishes, they don’t get soggy or flat after a few days in the fridge. Make them and thank me later.
