I always appreciate the comfort that my favorite meals provide (something we could all use right about now), even if they only help me feel better for just a little while. This week’s comfort food dinners hit the spot, with recipes like Spaghetti & Meatballs, Potsticker & Vegetable Soup and Skillet Chili Mac. Of course, food can’t always be our coping mechanism when we’re uncomfortable, but it can help by giving us energy and sustenance to tackle the big problems head-on.
Your Meal Plan
My comfort food cravings typically change depending on the time of the year. Like right now, the Skillet Chili Mac sounds really good to me, because it is, but also because it’s what we make over the fire when we go camping each summer (cue the special memories). And don’t let anyone tell you that you can’t have nachos for dinner, especially when they’re as good as Thursday’s Loaded Sheet-Pan Nachos. I’ll be ending the week with takeout to support a local restaurant and suggest you do too, if you can.

Sunday: Nonna's Spaghetti & Meatballs (I skip the veal and up the amount of ground beef to 1 pound)
Monday: Potsticker & Vegetable Soup
Tuesday: Grilled Blackened Shrimp Tacos
Wednesday: Skillet Chili Mac
Thursday: Loaded Sheet-Pan Nachos
Friday: Take-out from a local restaurant

Meal-Prep Breakfast
These yummy muffins are full of everything you'd expect in the bakery favorite—carrots, apple and raisins, topped with nuts and toasted wheat germ for some extra fiber. Make a batch of the beginning of the week to have on hand for easy breakfasts and snacks.

Treat Yourself
Fresh grapefruit, honey and jalapeños (if you like things spicy) make for a tart and juicy cocktail. A dash of vodka and and a salted rim and you’re good to go.
