ThePrep: One-Pot Dinners to Keep the Dishes Down

With every single meal and snack eaten at home these days, I think we can all agree that the amount of dishes we’re doing is absurd. Even with just two people in my house, it’s outrageous how they pile up—I can only imagine what it’s like for larger households. Needless to say, I’m over it, which is why this week’s dinners are all one-pot meals.
Your Meal Plan
Honestly, I often try to make most of my meals in one pot or pan, whether the recipe calls for it or not. That’s how much I dislike doing dishes. Even my husband, who’s notorious for destroying the kitchen every time he cooks, is doing a better job of only using the bare minimum. These dinners make it easy to use less.
I’m extra excited for the One-Pot Chicken Alfredo on Monday—I haven’t had Alfredo in ages and as we had snow flurries here in Vermont most days last week, I’m still craving those comforting, creamy dishes. To get some veggies into this meal without dirtying another pan, I’ll add frozen broccoli to the pot in the last few minutes of cooking.
Here are a few other tips for keeping this week of meals low-lift:
- For the Chickpea & Potato Hash recipe, skip the separate bowl in Step 1 and just mix the ingredients quickly in the skillet.
- I don’t have squash for Wednesday’s Braised Cauliflower & Squash Penne Pasta, so I’ll double up on cauliflower. And rather than use just 8 ounces of pasta, I’ll use the whole box and have leftovers on Thursday!
- I’ll be using onions instead of leeks in Friday’s Chipotle & Corn Chowder, will sub in smoked paprika for the canned adobo peppers and will toss in whatever veggies I have on hand come the end of the week.
Sunday: One-Pot Chicken Alfredo with broccoli florets
Monday: Chickpea & Potato Hash
Tuesday: Beef & Bean Sloppy Joes
Wednesday: Braised Cauliflower & Squash Penne Pasta
Thursday: Leftover penne!
Friday: Chipotle & Corn Chowder

My birthday is this week and while I don’t often make fancy cocktails for myself, I’m in the mood for something special to celebrate. A Negroni is what I’d order if we were going out for dinner, but since we’re staying in, I’ll just have to make it on my own. Cheers!
