While I'm a sucker for heart-shaped cookies or any excuse to have a date night with my husband, it's easy to put too much pressure on ourselves to have a ~*perfect~* romantic outing. There's absolutely nothing wrong with laying low and showing your Valentine (or galentines!) some love with a delicious meal at home. Essentially you just layer tomato slices in a heart shape, cut some fresh mozzarella into hearts with a cookie cutter, then garnish with basil, a drizzle of olive oil and balsamic glaze.
