Trader Joe's New Salad Kit Is Like a Low-Carb Pad Thai

While not everyone is looking to lose weight in the new year, most of us could certainly improve on our vegetable intake—especially since only 10% of Americans eat enough produce each day! Thankfully Trader Joe's is making eating your veggies way easier—and more delicious—with their latest product.

The grocer's new Peanut and Crispy Noodle Salad Kit is loaded with all kinds of tasty veggies and toppings. It's packed with romaine, cabbage, carrots, celery, green onion and cilantro, along with some crispy vermicelli rice noodles, chopped peanuts and a Thai-inspired zesty peanut and lime dressing. What's not to love?

This new product is low-carb, dairy-free and vegan, so it fits within a lot of different diet parameters. One serving with dressing has 140 calories, 9 grams of fat, 1.5 grams of saturated fat, 12 grams of carbs, 3 grams of fiber, 5 grams of sugar (3 of which are added sugars) and 4 grams of protein. Plus, it's pretty low in sodium (just 9% of your daily limit).

Top with some protein (like shrimp, edamame, tempeh or chicken) for a quick and easy meal or serve on the side with whatever you're cooking up for dinner tonight. This kit will feed your family of four for just $3.99—but it's also a great meal-prep option for one person.
