Oven-baked zucchini sticks taste every bit as good as the deep-fried version and have only a fraction of the fat and calories. To start, in a large sealable plastic bag, combine 1/2 cup whole-wheat flour, 1/2 cup all-purpose flour, 2 tablespoons cornmeal, 1 teaspoon salt and 1/2 teaspoon pepper. Cut 3 medium zucchini into 1/2-by-3-inch sticks. Dip the zucchini in 2 lightly beaten egg whites. Shake in the bag to coat and arrange, not touching, on a baking sheet coated with cooking spray. Coat all exposed sides of the zucchini sticks with cooking spray. Bake at 475˚F on the center rack for 10 minutes. Continue to bake until golden and just tender, about 8 to 10 minutes.
